Heavenly Matches and Earthly Delights: Wine and Food Preparation and Pairing
This CAU workshop pairs Abby Nash's skills as a restaurateur (before teaching at Cornell's School of Hotel Administration, he was the proprietor of one of Ithaca's most popular restaurants) with his talents as a master teacher of wines and wine appreciation. During the week we will enhance both our culinary and our wine evaluation and selection skills as we taste dry red and white table wines and sparkling, sweet, and fortified wines. With Abby providing extraordinary instruction and demonstrating food preparation, we'll work in teams to prepare a daily multi-course luncheon. Before we serve and enjoy each meal, we'll taste and discuss that day's wines, the better to evaluate them on their own merits and then in combination with the dishes we've prepared. No special background is necessary, but come prepared to learn to use a variety of culinary skills and equipment as we marry the pleasures of cooking with the delights of the vine. Facilities and materials fee: $175.
