Eat Right Here: Possibilities for Personal Health and a Sustainable Future
Do blueberries, blackberries, and pomegranates provide so much antioxidant protection that we'd be crazy not to eat them every day? Are meat and dairy important parts of a balanced diet? Any nutritionally and environmentally conscious person today can find daunting the welter of information about eating--much of it fragmented, some contradictory, a bit seemingly punitive. This class offers CAUers the chance to sort through conflicting advice to learn how to appreciate and enjoy the food we eat in the context of our own--and the Earth's--health. Leading our exploration is Jennifer Wilkins, nutritionist, senior extension associate in the Division of Nutritional Sciences, director of Cornell's Farm to School Program, and a popular and lively teacher. Jennifer advocated the consumption of locally grown food long before climate change, escalating food costs, water shortages, oil issues, and fine writers like Barbara Kingsolver made it such a hot mainstream topic. In lecture, informed discussion, and a field trip or two to Ithaca-based organizations that foster consumption of local food, we will each acquire the tools to form a cohesive plan for our own eating, one that ties sound nutritional advice to a respect for the environment and the joy of eating, a value sometimes lost in the shuffle.
