The Wines Course 2009
Wine appreciation involves the mind and the palate. We'll use both during this course, taught for CAU since 1997 by food and wine educator Abby Nash, superb CAU instructor, former owner and chef at one of Ithaca's most popular restaurants, and past faculty member of Cornell's School of Hotel Administration. We'll taste our way through wines of France, Italy, California, Australia, and yet more countries as we learn about climate, terrain, grape varieties, regional traditions, trends, and wine-and-health issues. We'll bring our newfound knowledge to the table at wine-and-food-matching lunches at local restaurants and learn how to evaluate wine, decipher wine labels, serve and store wine, start a wine cellar, and order wine in restaurants. Novices and aficionados are welcome. Bring your nose. Materials fee: $175.
